Harvest: grapes are hand-picked, selected and placed in 5kg trays and immediately processed
Vinification and aging: The grapes are processed immediately after harvest, with a very gentle pressing that allows approximately 30% of the berries to remain whole. Maceration occurs at spontaneous cellar temperatures for approximately 12 days to produce a must with a vibrant and intense color. The resulting must is fermented with spontaneous leavening using indigenous yeasts. After fermentation, the wine ages on the fine lees for at least six months.
