NARE' 2020 - CLASSIC METHOD - BRUT NATURE
NARE' vintage 2020 - Classic Method Brut Nature - 36 months on the lees
Obtained with 100% Corvina vinified in white.
Vinification and aging: The grapes are processed immediately after harvest, pressing the whole bunches to obtain a white must. The resulting must is fermented with spontaneous leavening using indigenous yeasts. The finished wine ages 80% on the fine lees in 15-hl stainless steel tanks, and the remaining 20% inoak barrels until the following spring, when it is bottled.
In the spring following the harvest, it is refermented in the bottle with a quantity of frozen must containing approximately 24 g/l of sugar. It is left to mature on the lees for 36 months, autolyzing. It is then disgorged "a la volè" and topped up with the same wine. It is then left to mature for another 3 months.
No fining, no physical or chemical stabilization, and no heavy filtration. Aged in bottle for two months.
